Best Berry Cheesecake
Updated: Aug 18, 2020
My sister loves cheesecake so naturally I have become a wiz at making them. I love the challenge of cooking them and trying not to let the top crack. Our latest and greatest was my pumpkin cheesecake because it was Thanksgiving and all. I have made many flavours along the years. Another hit was the plain cheesecake with lime syrup and a gingernut crust.
Cheesecake is loaded with protein and creaminess! I love using my kitchen aid to blend it all into that perfect consistency. I don’t think they are the cheapest of cakes to make because of the amount of cream cheese needed but they are right up there with the yummiest. I give The Cheesecake Factory a run for their money. Ha ha speaking of them my friend and I use to think they were so corporate and chainey when we were in college. Now I am happy to eat there shame free.
1 pack of scotch finger biscuits
3 Tbsp. sugar
1/3 cup butter
4 cups cream cheese
1 cup sugar
1 tsp. Vanilla essence
The first step
Blend biscuits, sugar and butter in a food processor
Press into a 9 inch pan with removable base/ springpan
Pre heat oven to 350F (gas)
Beat cream cheese, sugar, vanilla until mixed
Next add eggs on a low speed and beat until smooth and you don't see any lumps
Pour over crust
Bake for 50-55 minutes, until top is golden. I check it at 30 and again at 40 to see the colour and rotate if need be. You don't want the crack on top from cooking too long. It wont be bad if that happens but the perfect way is no crack
Chill in the fridge for at least four hours
Run a knife around the rim of the pan to loosen the cake; remove
Decorate with strawberries, blueberries and raspberries
Berry sauce is also a great addition
Berry Sauce Recipe
Bring some fresh or frozen berries to a light boil you can add a little sugar for extra flavour reduce heat and simmer for 10-15 minutes. let it cool and decorate once the cake is cool and ready.
You can choose a design pattern or just place berries in a mismatched fashion and slowly pour berry sauce over the fruit.
